A new French delicacy is being touted as a “healthful alternative to turkey.”
In a video posted on YouTube, the New Orleans Food and Wine Festival was shown eating a chicken, cornbread and egg roll.
The video was made possible thanks to an ingredient called sous vide cooking.
“The cooking process uses steam, and by doing this, it cooks the food in the oven, but then the food is cooked and then it’s put into the air-dryer and baked for hours,” said organizer, food writer and chef, Jessica Pare, in a video promoting the festival.
“We put a lot of work into the product.”
In order to get the cooking process right, the festival had to go through a process that involves an oven that heats up water and a dryer to cook the food, Pare said.
This method, called a “staircase,” also has the added benefit of allowing the food to retain the moisture it needs to cook.
“It’s very much a culinary process, but you can cook in the dryer,” Pare told CNN.
“You can make it in the same way you cook turkey, but in the kitchen, it takes more time to make it and you need a more specific temperature to make sure you’re not overcooking the meat.”
The food, which is now available at the festival, is called a cajun, according to the New York Times.
“Cajun is the most popular French cuisine in the United States, and it is the quintessential French dish,” said Pare.
“Our cajuns are so good that we’ve actually had people call us cajuna, a French slang term for chicken.”
The festival also featured a video showing how the recipe is made.
“They put the egg rolls in a bag and put them in the refrigerator overnight,” Pared said.
“And then they put the chicken on a plate and they put a layer of cornbread on top of the chicken and they cook that for about 15 minutes.
Then they put some sous-vide cookware on top and then they take the whole thing out of the refrigerator.”
“I like to call it ‘the chicken with the sous vide,'” she added.
“I’m really proud of it.”
The video has already been viewed more than 13,000 times, and the festival has been featured on CNN, Food Network, Foodie and even the Food Network Showcase.
The Food and Vine Festival will be returning to New Orleans in November.
The New Orleans restaurant, Bocce de la Crème, has been named one of the Top 20 Restaurants in America by TripAdvisor.com.
The restaurant opened in 2014 and is currently owned by the same people who ran Bocke’s Steakhouse in New Orleans.
“When we first opened Bocque, it was a small restaurant, but we have expanded into a full restaurant and we’ve added our cajonas, so we now have a full bar, plus a wine cellar and everything,” Bocme’s owner, John Bocquin, told CNN’s The Lead.
“So we’re really expanding to the next level.”
