The internet is awash with all kinds of great apple pie recipes and recipes for apple cider, including ones that use a lot of apple cider.
But I haven’t been making a real apple pie for a while, because I’ve been busy making a healthier version of it at home.
I’ve tried the standard apple pie, but the one made with sweet potato and cream cheese is a little too sweet and I’m not a fan of sweet potatoes.
I love my apples and am really happy to find that there are more options.
I also like that I can make this recipe using my Vitamix.
Apple Pie Recipe Ingredients 2-1/2 cups sweet potato (about 2 lbs.)
1/2 cup unsweetened applesauce 1 1/4 cups all-purpose flour 2 Tbsp.
baking powder 1/3 cup maple syrup 1 1.5 cups apple cider vinegar (or apple cider) 1 cup sour cream (or 1/8 cup water) 1/6 tsp.
salt 1/5 tsp.
Place all the ingredients in a large bowl and whisk well.
Let sit at room temperature for 30 minutes.
Remove from the refrigerator.
Serve the apple pie with a drizzle of maple syrup and a sprinkle of cinnamon.
I also use a little cinnamon in this recipe.
The recipe makes about 3-4 servings.
To make this healthier apple pie: 2 cups mashed sweet potato, peeled, cubed, and sliced into 1-inch cubes 3 tablespoons apple cider 2 tablespoons vegetable oil 1.
Whisk together sweet potato with the cider.
In a large pot, heat vegetable oil over medium-high heat.
Add sweet potato cubes and cook until they are tender and golden brown, about 4 minutes. 3
